Simon spent five seasons at Dundalk between 2002/03 and 2006, making his debut away to Kilkenny City on 26 January 2003. Having won promotion from the First Division with the Lilywhites in 2006, Simon left the club to spend eighteen months in the Irish League with Ballymena United. In July 2008 he returned to Oriel Park where he signed for John Gill and played for the next season and a half, leaving the club at the end of 2009.

In 2010 Simon had a short spell at Longford Town, making his debut for them against Wexford Youths on 4 May 2010. He made just three league appearances for the club, scoring once in a 3-0 win over Salthill Devon, before leaving to emigrate to Australia

In July 2013 Simon returned for a third spell at Oriel Park, signing for Dundalk manager Stephen Kenny. He made just 1 league appearance, as a substitute against Cork City at Turner's Cross on 19 July 2013 and injuries continued to plague Simon throughout 2014.
